How do I change the text colour in the GUI?

Where and how do I specify an override colour for the text in GUI menus such as pause menu buttons, inventory, creative build menu, worktables, etc?

I want to change the colour only, not any text itself, as this would overwrite language files, I believe, besides the massive work in itself to rewrite every string when that's not what I want to do.
